  • 2 tablespoons unsalted butter
  • 2 1/2 cups sliced bananas
  • 1 1/4 cups sugar
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon pumpkin pie spice
  • 1 store-bought, 9-inch graham cracker crust
  • Two 8-ounce packages cream cheese, room temperature
  • 6 large eggs, room temperature
  • 1 1/2 teaspoons pure vanilla extract
  • 1/3 cup all-purpose flour

Step 1

Preheat the oven to 350° F.

Melt the butter in a large, nonstick skillet over medium heat. Add the bananas and cook for about 2 minutes, stirring gently, until soft. Do not mash. Add 1/4 cup of the sugar, half of the lemon juice and the pie spice and cook, stirring gently, for 1 to 1 1/2 minutes or until the mixture thickens. Spread evenly over the pie crust.



In the bowl of an electric mixer, beat the cream cheese, eggs, remaining 1 cup of sugar and remaining 1 1/2 tablespoons of lemon juice on high speed until well blended.

Reduce the speed to low and gradually add the flour just until blended and no white streaks remain. Pour over the bananas.



Bake on a center rack in the oven for 40 to 45 minutes or until a small knife or toothpick inserted midway between the center and the edge of the pie comes out clean.

Cool completely on a wire rack. Cover loosely and refrigerate for several hours or overnight. Serve chilled.
