  • Spice Rub for Tenderloin:
  • Beef Tenderloin (1 pound)
  • Cinnamon
  • Crusted cloves
  • Crusted Star Anise
  • Crusted Chile de arbol or chili pepper flakes
  • Black peppercorns
  • Fennel seeds
  • Cumin seeds
  • fresh Thyme
  • Salt
  • Pepper
  • Olive oil
  • Chimichurri Sauce:
  • fresh parsley
  • fresh cilantro
  • fresh mint
  • fresh basil
  • 3 limes, juiced
  • 3 tablespoon red wine vinegar
  • Crusted chili flakes
  • Garlic
  • Salt
  • Olive oil
  • NOTE: if you want to heat this up, use a portion of Habanero pepper

Directions for Spice Rub:

1. Toast spices in dry skillet. Allow to cool and grind in spice grinder.
Directions for Beef Tenderloin:

1. Preheat oven to 415. Brush the tenderloin with olive oil and rub all over with Spice Rub. Sprinkle with salt.
2. Place the tenderloin on a rack in a roasting pan and roast it for 15 minutes. Reduce the oven to 350 and roast for 20 minutes for medium rare; roast 5 minutes longer for medium. Let the tenderloin rest for 15 minutes before carving.
Directions for Chimichurri Sauce:

1. Blend everything except oil in food processor.
2. Blend in oil and season.
