Mashed potatoes with ricotta

Ingredients
- 2 1/2 lbs russet potatoes cut into 1 1/2" chunks
- 1/4 c-1/2c milk
- 1 c ricotta
- 3 t thyme
- 2 tsp lemon zest
- 3-4 t evoo
- 2-3 t honey (orange blossom)

Preparation
Step 1
1) in md pot cover potato with water. cover pot and bring to boil over high heat. remove lid, salt water and cook til tender, 12-15 minutes. drain and return potatoes to pot.
2) mash with milk, ricotta, thyme, zest and evoo
3)season with salt and pepper. mash in honey
