Jim's Corn Fritters

Cooking Tip:
If you don’t have buttermilk, you can make your own. Add 4 T of vinegar to a quart of milk and mix well. Let stand for 5 to 10 minutes and use as buttermilk.

Ingredients
- approx. 2 cups self-rising flour
- salt and pepper or
- 2 T Montreal Steak Spice
- 4 eggs
- 1 cup of buttermilk
- 1 cup minced ham or bacon bits
- 1/2 cup minced onion or shallots
- 1 large can creamed corn
- 2 small or 1 large can corn nibblets
- (Mexican, if available)

Method
Combine all ingredients and mix well. You should be able to shape a fritter loosely with a dessert spoon. Drop by spoonfuls into about 2-inches of hot oil or into a deep fryer set at 375. Flat fritters will cook sooner than fritter balls. Turn frequently until browned and cooked through. Drain on paper towels and serve.
Note: finely chopped parsley and mushrooms can also be added to the fritter batter.
