Ingredients

  • Cake:
  • 4 eggs
  • 2 c. sugar
  • 3 c. finely shredded carrots
  • 1 8 0z. pkg cream cheese, softened
  • 1 1/2 c. vegetable oil
  • 2 c. flour
  • 2 tsp. cinnamon
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 c. chopped walnuts
  • 1 8 oz. can crushed pineapple, drained
  • Frosting:
  • 1/4 c. flour
  • 3/4 c. milk
  • 3/4 c. butter
  • 3/4 c. sugar
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 2 c. powdered sugar
  • additional nuts to decorate

Step 1

Cake: beat eggs and sugar. Add carrots, cream cheese and oil and beat until smooth. Add dry ingredients and mix well. Stir in pineapple and nuts. Pour into a 13x9x2 baking pan. Bake at 350* for 55-60 minutes. Cool.

Frosting: in a heavy saucepan, cook and stir flour and milk over medium-low heat until a thick paste forms, about 10 minutes. Chill for 30 minutes. Cream butter, sugar and salt. Gradually add chilled flour mixture and beat until fluffy, about 5 minutes. Add vanilla and sugar and beat well.

Frost cake and sprinkle with nuts.
