Ingredients

  • 6 oz roughy fillet
  • 2 tbsp,finely chopped garlic
  • 1 tsp or spray olive oil
  • parsley ,paprika to taste
  • For the Sauce;
  • cup chopped red bell peppers
  • 1/4 cup chicken stock
  • salt,pepper

Preparation

Step 1

Marinate the roughy with garlic,oil,parsley,and paprica.Sear the
fish on one side,then bake in the oven 10-15 min or until done

For Sauce
Puree the red peppers and chicken stock
Season with salt and pepper to taste and serve on the side.

1/4 cup brown rice pilaf
