Chickpea, Cherry, and Ginger Salad

  • 2 cans (15.5 ounces each) chickpeas, drained and rinsed
  • 1 can (11 ounces) mandarin oranges
  • 1/2 red onion, diced
  • 1 clove garlic, minced
  • 1 tablespoon minced fresh ginger
  • 2/3 cup chopped pecans
  • 2/3 cup dried tart cherries
  • 1 jalapeño chile pepper, minced (wear plastic gloves when handling)
  • 1 cup chopped parsley
  • 4 ounces feta cheese
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper


Servings 4


Step 1

In a large bowl, add the chickpeas, oranges, onion, garlic, ginger, pecans, cherries, chile pepper, parsley, and feta cheese. Stir to combine. In a small bowl, whisk together the vinegar and oil. Season with the salt and pepper. Pour over the chickpea salad and mix well.
