Soup A L'Onion

This is the recipe for French Onion Soup that my mom learned from a take home chef while she lived in Paris. It's very good. We like to use it in our fondue too. I use only olive oil & pam and no butter.

Ingredients
- 1/4 lb Butter
- 6 lrg Yellow Onions sliced thin
- 2 tb Sugar
- 2 tb Flour/Cornstarch
- 3 c Chix Broth
- 3 c Beef Broth
- S&P
- 2 lrg Onions of choice
- 6 French bread slices 1/2" thick
- Grated Gruyere or Paemesan Cheese

Preparation
Step 1
Place bread in warm oven to dry out
Melt butter in large sauce pan
Add 6 sliced yellow onions -cover &
simmer 30 min. stir frequently
Add sugar & flour
Add broths S&P
Simmer 30 min.
Carmelize 2 sliced onions in skillet
Add carmelized onions to soup
Serve soup with bread on top
Sprinkle with cheese
