Ingredients

    T butter

  • 2

    T olive oil

  • 1

    med. onion, finely chopped

  • 8

    large garlic cloves, minced

  • 2

    T flour

  • 1/2

    C chicken stock

  • 1/2

    C whipping cream

  • 10 oz. package fresh baby spinach leaves

  • 1

    C grated Parmesan cheese

  • 1/3

    C sour cream

  • 1/2

    tsp. cayenne pepper

  • salt & pepper to taste

Directions

Melt butter with oil in large heavy skillet over medium heat. Add onion and garlic; sauté until onion is tender, about 6 minutes. Stir in flour and cook for another 2 minutes. Gradually whisk in stock and cream and bring to boil, whisking constantly. Cook until mixture thickens, stirring constantly, about 2 minutes. Remove from heat. Stir in spinach, cheese, sour cream and cayenne. Season with salt and pepper. Serve warm with toasted baguette slices or crackers
