Warm Spinach Parmesan Dip

Ingredients
- 2 T butter
- 2 T olive oil
- 1 med. onion, finely chopped
- 8 large garlic cloves, minced
- 2 T flour
- 1/2 C chicken stock
- 1/2 C whipping cream
- 10 oz. package fresh baby spinach leaves
- 1 C grated Parmesan cheese
- 1/3 C sour cream
- 1/2 tsp. cayenne pepper
- salt & pepper to taste

Preparation
Step 1
Melt butter with oil in large heavy skillet over medium heat. Add onion and garlic; sauté until onion is tender, about 6 minutes. Stir in flour and cook for another 2 minutes. Gradually whisk in stock and cream and bring to boil, whisking constantly.
Cook until mixture thickens, stirring constantly, about 2 minutes. Remove from heat. Stir in spinach, cheese, sour cream and cayenne. Season with salt and pepper.
Serve warm with toasted baguette slices or crackers
