Ingredients
- 2 pounds beef round steak, cut 1/2" thick
- 1 teaspoon salt
- 1 cup shredded American cheese
- 1/2 cup onion, chopped
- 1/4 cup fresh parsley
- 2 tablespoons salad oil
- 2 tablespoons flour
- 1 can condensed beef broth
- 1/2 cup celery, chopped
- 1/4 cup flour
- 1/4 cup water
- 1/8 teaspoon pepper
- 1/2 teaspoon dry mustard

Step 1
1. Cut steak into 6 serving size pieces, pound to 1/4" thick.
2. Combine cheese, onion, celery and parsley. Place 1/4 cup of mixture on each piece of meat. Reserve 2 cups of cheese mixture. Roll up each steak jelly roll fashion; secure with toothpicks.
3. Combine the 1/4 cup flour, salt and pepper. Roll meat in flour mixture to coat. Brown meat. Combine broth and mustard; add to steak rolls. Cover and simmer 45 minutes.
4. Add reserved cheese mixture and simmer 15 - 30 minutes more. Blend together 2 tbs flour and water; stir into pan of juices. Cook, stirring constantly until sauce thickens and bubbles.
