Ingredients
- 6 tbs butter
- 1 small onion, chopped
- 1/4 flour
- 2 c half & half
- 3 c chicken broth
- 2 bay leaves
- 1/4 tsp freshly grated nutmeg
- kosher salt and freshly ground pepper
- 4 c broccoli florets
- 1 large carrot diced
- 8 oz grated sharp cheddar cheese

Preparation
Step 1
Melt butter in large pot over medium heat. Add onion and cook until tender, about 5 minutes. Whisk in flour and cook until golden, 3-4 minutes. Gradually whisk in half & half until smooth. Add chicken broth, bay leaves and nutmeg, then season with salt and pepper and bring to a simmer. Reduce heat to medium-low and cook, uncovered until thickened, about 20 minutes.
Add broccoli and carrot and simmer until tender, about 20 minutes. Discard bay leaves. Puree with immersion blender until smooth.
Add cheese and whisk over medium heat until melted. Add water if soup is too thick.
