Ingredients

  • 2 eggs
  • 1/4 c diced bell peppers
  • 1/4 c diced onions
  • 1/2 whole wheat English muffin
  • 1 oz mozzarela,shredded
  • 1/2 c fresh spinach leaves

Preparation

Step 1

Preheat the oven to 350F.Combine whole eggs.
Saute the bell peppers and onions.Pour the eggs mixture over the peppers and onions.Cook the omlet.
Place the 1/2 English muffin on a baking sheet,sprinkle with the cheese
and melt in a oven.Top with the spinach
and portioned amount of the omlet.This will be open-faced!
