Okra - Pan Fried

- Okra, cut in pieces (discard the ends)
- Extra Virgin Olive Oil
- Sea salt
- Pepper

Preparation
Step 1
Wash and cut okra into pieces, discarding the ends. Place just enough extra virgin olive oil to cover the bottom of a frying pan. Heat the oil on medium and when it is hot, add the cut okra to the pan. Cover tightly with a lid and cook approximately 20 minutes, turning occasionally with a spatula, until the okra is fork-tender. Remove the lid and continue to cook, turning gently with a spatula, until the okra begins to turn a golden brown. Sprinkle a teaspoon of sea salt and pepper over the okra. Remove from heat and serve. This is excellent served along side fresh sliced tomatoes!
