Roasted Parsnips

Ingredients
- 2 # parsnips, peeled and halved lengthwise
- 8 cloves garlic
- 1/2 onion, thickly sliced
- 5 sprigs fresh thyme
- 2 T olive oil
- 1/2 tsp. salt

Preparation
Step 1
Heat oven to 350 degrees.
Put parsnips in 2 T water in roasting pan, cover tightly with foil and bake 20 minutes.
Add gsrlic, onion, and 3 sprigs thyme. Drizzle with olive oil, and toss to coat. Roast, uncovered, until golden and tender, 30 to 40 minutes. Sprinkle with salt.
