Ingredients

  • 1 pound ground beef, browned
  • 3/4 cup onions, chopped
  • 3/4 cup carrots, shredded
  • 3/4 cup celery, diced
  • 1 teaspoon basil, dried
  • 1 teaspoon parsley flakes
  • 4 tablespoons butter, divided
  • 2 cans chicken broth
  • 6 potatoes, diced
  • 1/4 cup flour
  • 8 ounces Velveeta cheese, cubed
  • 2 cups milk
  • Salt and pepper, to taste
  • 1/4 sour cream

Preparation

Step 1

In a fry pan brown and drain burger.

Add to stock pot.

Then sauté onion, carrots, celery, basil and parsley in 1 tablespoon butter until veggies are tender ( about 10 minutes).

While those are sautéing add broth and potatoes to beef in the stock pan. Bring to a boil. Reduce heat and cover and simmer for 10 to 12 minutes or until potatoes are tender. Add sautéed veggies to stock pot.

Meanwhile in a small pan melt 3 tablespoons butter and add flour. Cook and stir for 3 to 5 minutes, until bubbly. Add to soup and bring to a boil. It will blend in. Cook and stir for 2 mins. Reduce heat to low and add sour cream, cheese, milk, salt and pepper. Let simmer until melted and potatoes are tender.
