Corn Dog Casserole

If you like corndogs, you'll LOVE this. I serve it with ketchup and mustard. I've also added diced jalapeno's to the batter to spice it up!

Ingredients

  • 1 Tbsp. butter
  • 2 boxes of corn muffin mix (8 1/2 oz. each)
  • 1 Tbsp. sugar
  • 2 eggs
  • 3/4 cup milk
  • 6-8 hotdogs
  • 4-5 slices of cheddar cheese

Step 1

Preheat oven to 400 degrees. Put butter in 11 x 7 baking dish, and place in preheating oven, just until butter melts. As soon as butter has melted, take dish out of oven and carefully move around to coat bottom and sides of dish with butter.

Put muffin mix, sugar, eggs and milk into large bowl and mix until well combined. Pour 1/2 of batter into buttered baking dish. Place whole hotdogs in rows on top of batter 3/4" apart, leaving 1/2" space from both edges of dish. Place slices of cheese evenly over hotdogs. Pour the rest of batter over the top.

Bake for 30 - 35 minutes until golden brown and toothpick inserted comes out clean. Let cool a few minutes before serving.
