Ingredients

  • 1 chipotle chile pepper (wear plastic gloves when handling)
  • 2 tablespoons olive oil
  • 3/4 pound pork tenderloin
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon ground red pepper
  • 2/3 cup diced onion
  • 1 tablespoon minced garlic
  • 1/2 cup barbecue sauce
  • ketchup
  • 1/4 cup water
  • 1 teaspoon maple syrup
  • 4 sandwich buns, split and warmed

1.Place the chipotle pepper in a small bowl. Cover with hot water and let stand for 5 minutes. Drain and remove the stem and seeds. Coarsely chop the pepper and set aside.
2.In a large nonstick skillet, heat 1 tablespoon of the oil over high heat until hot but not smoking. Add the pork and brown on all sides. Sprinkle with the black and red pepper. Transfer the pork to a large sheet of foil.
3.In a 2-quart saucepan, heat the remaining 1 tablespoon olive oil over medium heat. Add the onion and cook, stirring occasionally, for 5 minutes, or until softened. Add the garlic and cook for 1 minute longer. Add the barbecue sauce, ketchup, water, maple syrup, and the chopped chipotle pepper. Bring to a boil and simmer for 10 minutes.
4.Preheat the oven to 350°F.
5.Spoon one-third of the sauce over the pork. Wrap well in the foil and bake for 25 minutes, or until a thermometer inserted in the center reaches 155°F and the juices run clear.
6.Cut the pork into very thin slices, then cut again into thin strips. Add the pork to the remaining sauce in the saucepan and heat through. Serve on the buns.
