Ingredients
- 3 lbs. boneless chuck roast
- 1/2 onion, diced
- 1 1/2 c. ketchup
- 2 T. Dijon mustard
- 1/4 – 1/3 c. packed brown sugar
- 1/4 c. red wine vinegar
- 1 t. liquid smoke
- 1/2 t. salt
- 1/4 t. pepper
- 2 – 3 cloves garlic, minced

Preparation
Step 1
Place chuck roast into a crock-pot. Combine remaining ingredients in a mixing bowl and pour sauce over meat. Cover and cook on low for 8 – 10 hours. Remove roast from crock-pot and shred meat with two forks. Place shredded meat back into crock-pot and stir to coat meat with sauce. Cook for 15 – 20 minutes with lid off on high to reduce sauce. Serves 12.
