French Onion Soup

Ingredients

  • 1/4 cup butter
  • 4 large yellow onions, thinly sliced
  • 1/2 teaspoon sugar
  • 6 cups canned beef broth
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon paprika
  • Salt and Pepper to taste
  • Sliced French or Italian Bread- thin
  • 1/4 cup freshly grated Gruyere cheese
  • 1/4 freshly grated Parmesan cheese

Step 1

Heat butter in large pan over medium heat. Add onion and sugar and saute' until golden. Add broth, Worcestershire and paprika and bring to boil. Reduce heat and simmer uncovered 15-20 minutes. Add salt and pepper to taste.

Meanwhile butter and toast both sides of bread under broiler. Then, pour soup into oven-proof soup crocks, float bread on soup, sprinkle cheeses on top and run under broiler until cheese is bubbly and lightly toasted.

May substitute mozzarella for Gruyere

Maybe frozen for 2 months
