Homemade Rotel Tomatoes


One pint + one pound of melted Velveeta = heaven. I also use in chili, taco soup, vegetable soup...whenever I want to add zip to a recipe!

  • 1 gallon tomatoes, peeled and chopped
  • 2-3 green bell peppers, chopped
  • 7 to 10 jalapeno peppers, chopped (7 for medium or 10 for hot)
  • 1 large onion, finely chopped
  • 1/2 cup sugar
  • 3/4 cup cider vinegar
  • 1 1/2 T canning salt



Step 1

Chop peppers and onions into small pieces.

Put all ingredients into a large pot and bring to a boil; simmer 45 minutes stirring frequently.

Put tomato mixture into prepared pint jars leaving 1/4 inch head space.

Process for 15 minutes in boiling water bath.
