Ingredients

  • 1 tbsp. sugar
  • 1/4 c. sliced almonds
  • 2 c. torn iceberg lettuce
  • 2 c. torn romaine
  • 1/2 can mandarin oranges, drained
  • 1/2 large ripe avocado, peeled and cubed
  • 1/4 cup diced celery
  • 1 green onion, sliced
  • DRESSING
  • 2 tbsp. vegetable oil
  • 1 tbsp. sugar
  • 1 tbsp. cider vinegar
  • 1 tsp. minced fresh parsley
  • 1/8 tsp. salt
  • 1/8 tsp. pepper

Step 1

1. In a small skillet over medium-low heat, cook sugar, without stirring for 12-14 min or until melted. Add almonds; stir quickly to coat. Remove from the heat, pour onto waxed paper to cool.

2. In a large serving bowl, combine the iceberg lettuce, romaine, oranges, avocado, celery, onions and almonds. In a jar with a tight fitting lid, combine the dressing ingredients; shake well. Drizzle over salad; toss gently to coat.
