BROCCOLI - LEEK SOUP – 3 persons

Ingredients
- 1 Tsp unsalted Butter
- 1 Tsp Extra Virgin olive oil
- 6 medium leeks
- 5 pds. Brocoli sliced 1/2 inch. (4 bunches)
- 6 garlic cloves sliced thinly
- 12 cups chicken stock
- salt and white pepper
- 1/2 cup sour cream
- 4 Tablespoons fresh lemon juice
- 1/2 cup snipped chives
- 1/4 cup grated Parmesan cheese
- Grated zest of 1 lemon ( finely)

Preparation
Step 1
Melt butter in the olive oil, add leeks and cook over moderate high heat,
Stir in the brocoli, garlic, stock, salt and pepper and bring to a boil ( 20 minutes)
Meanwhile in bowl stir the sour cream and lemon, zest, juice, chives and parmesan
Transfer the soup to blender stir ½ of cream en serve, put other ½ of cream over
Soup in each plate
