Grilled Herbed Pork Loin

Ingredients
- 1/4 cup olive oil
- 2 tablespoons minced garlic
- 1 tablespoon minced fresh rosemary or 1 teaspoon dried
- 1 tablespoon mined fresh thyme or 1 teaspoon dried
- 1 teaspoon salt
- 1 teaspoon freshly ground pepper
- 1/4 teaspoon allspice
- 4 pounds boneless pork loin, tied
- (Can be made ahead. Wrap and refrigerated up to 24 hours)

Step 1
Prepare covered grill for indirect cooking or preheat oven to 375 degrees.
Place disposable foil roasting pan across center of grill. Place pork loin on grill above roasting pan. Cook, turning every 15 minutes, until thermometer inserted in thickest part reaches 160 degrees and juices run clear when meat is pierced, about 60 to 70 minutes.
To roast: Heat 1 tablespoon olive oil in roasting pan over high heat. Add pork and cook until browned on all sides, 5 minutes. Transfer to oven and roast until meat thermometer inserted in thickest park reaches 160 degrees and juices run clear, about 60 to 70 minutes.
Let pork stand at least 10 minutes before slicing. Serve warm or at room temperature.
