Ingredients

  • 2 tbs olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 2 tbs chopped parsley
  • 14 oz can diced tomatoes
  • 2 medium potatos, diced
  • 6-8 large Sicilian olives
  • 1 tbs capers
  • 1 lb cod or scrod

Preparation

Step 1

-cook onion, celery and tomatoes, parsley until soft in olive oil
-add potatos, olives, capers and simmer for 10 minutes until potatos are 1/2 done
-add cod and simmer until potatoes are fully cooked-about 10 minutes longer

- cook early in the day or day ahead for best flavor
