french onion soup

Ingredients
- 5 c thinly sliced yellow onions
- 3 T margarine
- 1 T onion
- 1 tsp salt
- 1/4 tsp sugar
- 3 T flour
- 2 quarts veggie stock
- 1/2 c white wine
- salt and pepper
- 1 baguette
- thinly sliced swiss or montary jack cheese
- evoo

Preparation
Step 1
cook onions slowly with butter and oil in covered saucepan for 15 minutes.
uncover, raise heat to moderate and stir in the salt and sugar. cook for 30 minutes stirring frequently until onions have turned a deep golden brown.
sprinkle in flour and stir for 3 minutes.
take off heat and stir in hot veggie stock. add wine and season to taste. simmer partially covered for 30 minutes or more.
slice baguette 1/2 in. thick slices. place bread in one layer on baking sheet and bake in 325 degree oven for 30 minutes, until dried out and lightly browned.
after baking rub each piece with cut garlic.
preheat oven 325. pour onion soup in a tureen. float rounds of toast on top of soup and spread sliced cheese over it. sprinkle with evoo. bake for 20 minutes and then broil for 1 minute under broiler to brown top lightly. serve immediately
