Coconut Bread Pudding

This bread pudding was discovered on a buffet table at the Marriott Ko Olena Resort on the island of Oahu while vacationing with our friends Dianne and Roger. They were happy to share this recipe with us!

Ingredients

  • 7 eggs, well beaten
  • 2 cups heavy cream
  • 4 cups whole milk
  • 2 1/4 cups sugar
  • 1 Tbls. vanilla
  • 1 cup coconut milk
  • 1/2 cup shredded coconut
  • 1 med. loaf white bread, corsely cubed

Step 1

Combine first 6 ingredients and mix well, to make a custard. Toss corsely cubed bread with shredded coconut and place in a buttered 9 x 13 baking dish. Pour custard mixture over bread. Place baking dish in a larger pan with 1" of water. Bake at 350 deg. for 1 -1 1/2 hours. Remember, all ovens are different. Bread should be firm but not hard. Remove bread pudding from waterbath. Serve with coconut whipped cream or caramel sauce.
