- 3 teaspoons honey
- 1 1/2 teaspoons ground cumin
- 3 Tablespoons fresh lime juice • 1/2 teaspoon salt
- 1/4 cup extra virgin olive oil
- 3 mangoes, peeled and cut into 1/2-inch pieces
- 4 mini cucumbers or 1 large cucumber, cut into 1/2-inch pieces
- 1/2 small red onion, thinly sliced
- 3 Tablespoons thinly sliced fresh mint leaves, or 2 teaspoons dried mint
- 1/4 cup crumbled goat cheese
- 2 Tablespoons sliced almonds

- small red onion(1/2, thinly sliced)
- fresh mint leaves(3 tablespoons or 2 teaspoons dried mint, thinly sliced)
- • goat cheese(1/4 cup, crumbled)
- almonds(2 tablespoons, sliced)

step l In a small bowl, make the dressing by mixing together the honey, cumin, lime juice, salt and olive oil. Set aside.
step 2In a medium-size bowl, mix together the mangoes, cucumbers, onion and hali the mint. Toss with the reserved dressing from Step 1 and place the salad on a serving platter. Sprinkle the remaining 11/2 Tablespoons mint and the cheese and almonds on top of the salad.
