  • teaspoons ground cumin

    Tablespoons fresh lime juice • ½ teaspoon salt

    cup extra virgin olive oil

    mangoes, peeled and cut into ½-inch pieces

    mini cucumbers or 1 large cucumber, cut into ½-inch pieces

    small red onion, thinly sliced

    Tablespoons thinly sliced fresh mint leaves, or 2 teaspoons dried mint

    cup crumbled goat cheese

    Tablespoons sliced almonds

  • fresh mint leaves(3 tablespoons or 2 teaspoons dried mint, thinly sliced)

  • • goat cheese(¼ cup, crumbled)

  • almonds(2 tablespoons, sliced)


Directions step l In a small bowl, make the dressing by mixing together the honey, cumin, lime juice, salt and olive oil. Set aside. step 2In a medium-size bowl, mix together the mangoes, cucumbers, onion and hali the mint. Toss with the reserved dressing from Step 1 and place the salad on a serving platter. Sprinkle the remaining 11/2 Tablespoons mint and the cheese and almonds on top of the salad.
