  • Ingredients
  • 3 teaspoons honey
  • 1 1/2 teaspoons ground cumin
  • 3 Tablespoons fresh lime juice • 1/2 teaspoon salt
  • 1/4 cup extra virgin olive oil
  • 3 mangoes, peeled and cut into 1/2-inch pieces
  • 4 mini cucumbers or 1 large cucumber, cut into 1/2-inch pieces
  • 1/2 small red onion, thinly sliced
  • 3 Tablespoons thinly sliced fresh mint leaves, or 2 teaspoons dried mint
  • 1/4 cup crumbled goat cheese
  • 2 Tablespoons sliced almonds

  • ground cumin(1 1/2 teaspoons)
  • fresh lime juice(3 tablespoons)
  • • salt(1/2 teaspoon)
  • extra virgin olive Oil(1/4 cup)
  • mangoes(3, peeled and cut into 1/2-inch pieces)
  • mini cumubers or large cucumber(4, cur into 1/2-inch)
  • small red onion(1/2, thinly sliced)
  • fresh mint leaves(3 tablespoons or 2 teaspoons dried mint, thinly sliced)
  • • goat cheese(1/4 cup, crumbled)
  • almonds(2 tablespoons, sliced)



Step 1

step l In a small bowl, make the dressing by mixing together the honey, cumin, lime juice, salt and olive oil. Set aside.
step 2In a medium-size bowl, mix together the mangoes, cucumbers, onion and hali the mint. Toss with the reserved dressing from Step 1 and place the salad on a serving platter. Sprinkle the remaining 11/2 Tablespoons mint and the cheese and almonds on top of the salad.
