Greek Yogurt Whole Wheat Maple Apple Cake

Ingredients

  • For the cake:
  • 1 cup low fat unsweetened Greek Yogurt
  • 1/2 cup unsweetened applesauce
  • 2/3 cup light olive oil
  • 1 cup granulated sugar
  • 1/4 cup maple syrup
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 1/2 cups white whole wheat flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp apple pie spice
  • 1 1/2 cups peeled and diced apples
  • For the glaze:
  • 1/4 cup powdered sugar
  • 1 tbs maple syrup
  • 1/4 tsp apple pie spice
  • Milk

Preparation

Step 1

Preheat oven to 350.

In a large mixing bowl mix Greek yogurt, apple sauce, olive oil, sugar and maple syrup together until combined.

Mix in each egg one at a time.

Mix in vanilla, flour, baking powder, baking soda, salt and apple pie spice. Once all the dry ingredients are incorporated fold in apple pieces. (Recommend using beaters to fully incorporate the dry ingredients)

Pour cake batter into a well greased bundt pan. Bake for one hour or until a tooth pick is inserted in the center and it comes out clean.

Allow cake to cool for about a half hour and transfer cake to your serving plate.

To make the glaze, whisk powdered sugar, maple syrup and apple pie spice until smooth. Pour in milk just a little bit at a time until desired consistency. Drizzle over the top of the cake and serve.
