Ingredients
- FOR COOKIE:
- 3/4 cup butter, softened
- 3/4 cup brown sugar
- 1/4 cup sugar
- 2 eggs
- 1 tsp. vanilla
- 1 tsp. baking soda
- 1 (3 oz.) box coconut cream pudding mix
- 2 cups flour
- 1/2 cup shredded coconut
- FOR FROSTING:
- 4 T. butter, softened
- 2 T. milk
- 2-3 cups powdered sugar
- 1 tsp. vanilla

Preparation
Step 1
1.Beat butter and sugars. Add eggs and vanilla and mix well.
2.Add pudding mix, soda, and flour, and mix until just combined.
3.Add coconut and mix just enough to incorporate.
4.Drop scoops onto baking sheet, and bake at 350 degrees for 8-10 min.
5.FOR FROSTING:
6.Combine all ingredients and mix well. Adjust consistency by adding more powdered sugar or milk.
7.Frost cooled cookies.
