Ingredients

  • For the Cake

  • ¾

    cup sugar

  • 6

    tablespoons butter, browned and divided

  • 2

    tired bananas, mashed

  • 1

    egg

  • ½

    cup milk

  • cups flour

  • 2

    teaspoons baking powder

  • teaspoon salt

  • For the Streusel

  • ½

    cup brown sugar

  • 2

    tablespoons flour

  • 2

    teaspoons cinnamon

  • 2

    tablespoons reserved browned butter

  • 1

    cup pecans or walnuts, optional

Directions

1.Preheat oven to 350°. Spray a 9” square pan or a 10” pie plate with cooking spray. 2.Add 6 tablespoons of butter to a small frying pan. Cook over low heat, stirring until it browns. It will foam up, then turn brown. Keep stirring the entire time. Once it turns brown the foam will diminish and the butter will become golden. Remove from heat. You are using this butter for both the cake and streusel! 3.Whisk flower, baking powder, and salt together in a medium bowl. 4.Mix sugar, 4 tablespoons of the browned butter, and egg in a large bowl. Stir in milk. Stir dry ingredients into wet and stir until just combined. 5.Make the crumb topping: stir together brown sugar, flour, cinnamon, remaining browned butter, and nuts. 6.Place the cake batter in the pan and spread to fit. Top with the streusel. Bake for 25-29 minutes until a toothpick comes out clean. (Mine baked 26 minutes in a 10” pie plate.)
