Ingredients
- 1 lb Russet potatoes- grated, shredded
- 1/2 c flour
- 1/2 tsp salt
- 1 TBS cornstarch
- white pepper
- 1 egg yolk

Step 1
Grate potatoes in bowl and pour boiling water and cover by 2 inches. Drain in 10 minutes. Put potatoes in a clean towel and squeeze water out.
Put next 5 ingredients in a large bowl. Add potatoes and mix with a wooden spoon.
Roll potatoes into bite size pieces, roll into panko bread crumbs. Put little oil on cookie sheet get hot in oven. Put potatoes on cookie sheet Bake for 30 minutes at 425' flipping halfway thru cooking.
