Caramel Apple Strata {Gluten Free & Allergy Friendly}


Our version of this heavenly brunch bake that's perfect for the upcoming holidays! Prepare the night before and it's ready to bake in the morning. {Gluten, Dairy, Soy, & Nut Free}

  • 2 cups packed brown sugar
  • 1/2 cup non-dairy butter (use Earth Balance new soy free baking sticks for Vegan, soy free, gluten free, dairy/ lactose free)
  • 1/4 cup corn syrup
  • 4 large Apples, peeled and chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon sugar
  • 1 teaspoon all-spice
  • 1 teaspoon of ground cinnamon
  • 1 loaf of Udi's (gluten, dairy, soy, & nut free) Cinnamon Raisin Bread
  • 10 eggs
  • 1 cup non-dairy milk (we used vanilla rice milk)
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract

Step 1

1. In a small saucepan on the stove, combine the brown sugar, non-dairy butter and corn syrup. Bring to a boil over medium heat, stirring constantly (<-- important). Cook and stir for 2 minutes or until thickened. Set aside.
2. In a medium size bowl, toss together the apples, lemon juice, sugar, all-spice, and ground cinnamon.
3. Arrange HALF of the bread slices in a greased 13x9" baking dish. Pour apples evenly over bread. Drizzle with HALF of the caramel sauce then top with remaining bread slices.
4. In a large bowl, combine the eggs, non-dairy milk, salt and vanilla. Pour over top the entire dish contents.
5. Cover and refrigerate overnight. Cover and refrigerate the remaining caramel sauce.
6. Preheat oven to 350 degrees and remove strata from the refrigerator for at least 30 minutes before baking.
7. Bake uncovered for 50-55 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.
8. In a small microwave-safe dish, microwave reserved sauce, uncovered, for 1-2 minutes or until heated through. Drizzle over strata.
