Ingredients
- 1 c mayonnaise
- 2 T lime juice
- 2 cloves finely chopped garlic
- 1 tsp ground chipotle chile pepper or 1 chipotle pepper in
- adobo sauce, finely chopped
- 2 lbs boneless, skinless chicken thighs, cubed,or boneless,
- skinless breasts, cut into thin strips
- 2 T chopped fresh cilantro

Step 1
Combine all ingredients except chicken in a medium bowl,
reserving ½ c mayonnaise mixture.
Thread chicken on skewers, then brush with the mayonnaise
mixture.
Grill or broil chicken, turning once; 8 min. or until chicken
is thoroughly cooked.
Serve chicken skewers with reserved mayonnaise mixture.
