Ingredients

  • Potatoes

  • Butter

  • S&P

  • Whole Milk

Directions

-Peel and cut up potatoes. -Boil in generously salted water. -Drain in colander . -I do the process two different ways, depending on how crowded my work space is, Method #1(plenty of room) Put potatoes in the bowl of a stand mixer. Heat milk and butter in pot used for cooking potatoes. S&P the potatoes while milk heats up. Pour half of the milk over the potatoes, start the mixer on slow, hot milk will slash if you rush this. As the milk gets incorporated add more milk and continue to "whip". Season to taste. Method #2 (cramped for space) Put milk and butter into hot pot, do not turn the burner on. Add potatoes and S&P,put the lid on and let everything sit for 10-15 minutes? Start to smash the potatoes with a masher or wooden spoon, season as needed.
