Easiest Ever Potato Latkes

Ingredients

  • 4 medium potatoes, peeled and quartered
  • 1 medium onion, peeled and quartered
  • 2 eggs
  • 1/3 cup flour
  • 1 tsp baking powder
  • 1 tsp salt
  • Black pepper to taste
  • Vegetable oil for frying

Preparation

Step 1

In the bowl of the food processor, place potatoes, onion and eggs. Process until pureed. (looks a bit like cake batter)
Add remaining ingredients – except the oil and process for another few seconds until mixture is smooth.

Heat oil in a large non stick skillet on medium high heat. Just like pancakes, the mixture will dry at the edges and show bubbles in the centre when it is time to turn to the other side to be browned. Brown well on both sides and then transfer to a paper towel lined pan to drain.

Add additional oil for frying the next batch and be sure to stir the potato mixture well before beginning to drop in the new batch of potato mixture.

Latkes can be placed on a baking sheet and kept warm in at 250 degree oven
