Ingredients
- Dressing:
- 1 pkg orzo
- 1/2 pkg fresh spinach
- 1 small jar sundried tomatoes
- 2 handfuls of capers
- 2 handfuls of pine nuts
- 1 can cannelini beans, rinsed and drained
- 1 can sliced black olives
- 1/4 c red wine vinegar
- 3 T honey
- 1/2 tsp salt
- 1/2 oz roasted garlic
- 3/4 c extra virgin olive oil
- juice of 1/2 lemon

Step 1
Cook orzo, according to package. Drain and rinse.
Take spinach leaves and roll, then cut into thin strips. Add the rest of ingredients to large bowl.
Place vinegar, honey, salt, and roasted garlic in a food processor. Puree until the garlic is chopped very fine. With the food processor still running, add the olive oil and lemon juice. Pour over salad & mix. Chill and serve.
Can also add chopped chicken to make a heartier salad.
