Ingredients
- PASTA SALAD DRESSING:
- 2 cups fresh snow peas
- 1/3 cup water
- 2 cups broccoli flowerets
- 1/3 cup water
- 2 cups cherry tomatoes, halved
- 2 cups sliced fresh mushrooms
- 1/2 cup black olives--sliced
- 3 oz. pasta twists, cooked
- 1 Tblsp grated Parmesan cheese
- 1 cup hot pepper cheese, cubed
- 1/2 cup green onions, chopped
- 1/2 cup olive oil
- 1/3 cup red wine vinegar
- 2 Tblsp fresh parsley
- 2 cloves garlic, minced
- 2 tspn honey-Dijon mustard
- 1 tsp basil
- 1/2 tsp salt
- 1/2 tsp pepper

Preparation
Step 1
In 2-qrt casserole, place snow peas and 1/3 cup water. Cover. Microwave at HIGH (10) 2 minutes. Rinse in cold water immediately. Drain and set aside. Repeat same procedure with broccoli. Drain. Add snow peas, tomatoes, mushrooms, olives, pasta. Parmesan cheese and hot pepper cheese. Toss with pasta salad dressing. Chill several hours before servings.
DRESSING DIRECTIONS:
In a jar, combine green onions, vegetable/olive oil, vinegar, parsley, garlic, mustard, basil, salt and pepper. Cover tightly. Shake vigorously until well mixed.
Makes 1 1/4 cups.
