Apricot Almond Bars

Ingredients

  • Stir soft butter into flour mixture 'til crumbly, then mix in:
  • 1 and 1/2 c. almond flour
  • 3/4 c. packed br. sugar
  • 1 tsp. baking powder
  • Combine all in large bowl.
  • 1 c. butter, softened
  • 1 and 1/2 c. rolled oats
  • 1/2 c. coconut
  • 1/2 c. chopped almonds
  • Reserve half of mixture, press rest onto bottom of greased 9x13" pan.

Step 1

Spoon 10.5 oz. jar of apricot butter evenly over top. Crumble reserved mixture over top of apricot butter. Sprinkle top with 2 T. sliced almonds and 2 T. coconut, and bake @ 350 degrees 25-30 mins. or 'til lightly browned. (Center may not be set but will firm up on cooling.)

Note: Use Simon Fischer brand Apricot butter. Can also use Peach.
