Kathy's Beef Pie

Another one of Marty's favorites! This is fairly easy to prepare, once you get the hang of the brown sauce. I usually make a double batch of the filling and serve it again later in the week or freeze it. The second time all you have to do is prepare the crust, heat the filling pour in the the crust and prepare the topping!

Ingredients

  • Brown Sauce:
  • 1 9 inch deep dish pie crust
  • 2 tablespoons butter
  • 3 tablespoons flour
  • 1 cup beef broth or stock
  • 1/4 teaspoon tabasco sauce
  • Filling:
  • 1 pound ground round, drained
  • 1 medium onion, diced
  • 1/4 cup med or dry red wine
  • 1 16 ounce can mixed vegetables, drained (I use canned Veg-All)
  • 1/2 teaspoon salt
  • Topping:
  • 1 cup grated cheddar cheese
  • 1 egg
  • 1 tablespoon 2% milk

Step 1

Preheat oven to 400 degrees
In large saucepan or dutch oven melt butter over medium low heat. Stir flour into melted butter until smooth. Slowly stir in broth and tabasco sauce - using a whisk if necessary to remove any lumps. Stir until sauce thickens and just comes to a boil. Turn to low heat.
Meanwhile brown beef and onion. Drain. Add salt and wine to beef and simmer 7 to 10 minutes.
Add beef and drained vegetables to brown sauce, stir to combine.
Pierce pie crust with a fork. Bake 400 degrees, 5 to 6 minutes. Remove.
In small bowl mix grated cheese, egg and milk. Pour meat mixture into pie crust, spread the cheese mixture over the filling.
Bake 15 minutes or until cheese topping is lightly browned.
Let sit 7 to 10 minutes before cutting and serving.
