Ingredients

  • 3 lbs. beef chuck, cut into cubes
  • 1/3 cup flour
  • 1/4 cup butter or margarine
  • 1/4 cup oil
  • 3 slices of bacon, cut up
  • 8 carrots
  • 1 large onion
  • 2 leeks chopped (optional)
  • 1 clove garlic, minced
  • 1 1/4 cup red Burgundy wine
  • 1 cub beef broth
  • 1/2 lb. mushrooms
  • 1 Tbs. butter

Preparation

Step 1

Dredge beef in flour. Brown well in butter and oil, set aside.

In skillet, cook and stir bacon, carrots, onions, leeks, and garlic until bacon is crisp and vegetables lightly browned. Drain and place mixture in Dutch Oven with meat. Add one cup Burgundy and beef broth. Cover and simmer for 60–90 minutes or until tender. Before serving, brown mushrooms in butter until tender and add to mixture with 1/4 cup Burgundy. Serve with buttered noodles or wild rice.
