Mashed Potato Pancakes

- 1 egg, well beaten
- 2 cups cold mashed potatoes
- 1 Tbsp. minced onions
- 1/2 tsp. salt
- 1 tsp. minced parsley
- 3 Tbsp. shortening, butter
Blend the egg with the potatoes.
Add the onion, salt, and parsley.
Drop by spoon into a frying pan containing sizzling hot fat.
Brown each croquette or patty on one side, turn and brown the other side.
