Ingredients

  • For the salmon

  • 5

    x 1/2 lb skinless salmon fillets, boned

  • 10

    slices of Proscuitto

  • splash of olive oil

  • juice of a lemon

  • salt & freshly ground black pepper

  • fresh herbs, chopped (e.g. basil and flat-leaf parsley)

  • For the dressing

  • 2/3

    cup of sour cream

  • juice of half a lemon

  • salt & freshly ground black pepper

Directions

Preheat oven to 425 2. Season the salmon fillets with the pepper and wrap them in the slices of prosciutto. Drizzle with a little olive oil and bake in the oven for 10-12 minutes; the proscuitto should be crisp. 3. Remove the skin and stone from the avocado, then cut the flesh into small cubes. Place in a blender with a good squeeze of lemon juice, plus salt and pepper. 4. Fold in 2/3 cup of sour cream. Serve to the side of the salmon.
