Grilled Chicken Sandwich with Remoulade & Shaved Lemon

Ingredients

  • 4 thin chicken cutlets
  • 1/2 C orange juice
  • 3 T olive oil
  • Salt & pepper
  • 8 slices country bread
  • 1/3 C Mayonnaise
  • 1 T chopped parsley
  • 1 T chopped cornichons or dills
  • 2 t Dijon mustard
  • 1 finely chopped scallion
  • 1 clove minced garlic
  • 1 t chopped capers
  • 1/2 lemon sliced paper thin
  • 1 t lemon juice
  • 1 bunch watercress

Step 1

Light grill. In med. bowl, toss chicken with orange juice & 2 T olive oil. Season with salt & pepper. Let stand 10 min.
Meanwhile, brush both sides of bread with remaining 1 T olive oil & grill til toasted. In bowl, mix mayonnaise with parsley, cornichons, mustard, scallion, garlic, capers & lemon juice.
Grill chicken over hi heat til lightly charred & cooked thru, @ 6 min. Spread remoulade on toast. Top with chicken, few slices of shaved lemon & watercress. Cut in half & serve.
