Ingredients

  • 1/3 cup honey
  • 2 tbsp. fresh lemon juice
  • 3 medium granny smith or rome apples,peeled,cored, cut into thick wedges
  • 3/4 cup sugar
  • 6 tbsp. margarine,softened
  • 1/4 cup packed brown sugar
  • 1 tsp. vanilla
  • 2 large eggs
  • 1 tsp. grated lemon rind
  • 1 cup flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 tbsp. sugar
  • 1/2 tsp. cinnamon

Preparation

Step 1

1. Preheat oven to 350 degrees.
2. Spray a 9 inch springform pan with pam with flour.
3. Combine the lemon juice and honey in a large non stick pan. Bring to a simmer over medium heat. Add the apples and cook for about 10 minutes. Stir occasionally to coat the wedges. Remove from heat and set aside.
4. In a mixer combine the sugar, margarine, brown sugar, and vanilla. Beat for 1 minute. Add the eggs and lemon rind beat for another minute.
5. Combine the flour, baking powder, and salt in a separate bowl. Add to mixer and beat until combined.
6. Pour the batter into the prepared pan. Remove the apples from pan and discard the liquid. Place apples in a concentric design on top. Do not press in.
7. Combine the 1 tbsp. sugar with cinnamon and sprinkle on top.
8. Bake for 50 minutes to an hour. Cool completely before removing sides of pan.
