bake at 325-350 30-35 mins/lb
bake in roasting pan with no lid
do not salt until brown
put roast in pan with 1/2s of onions
don't let pan get dry
add water as pan dries
salt & pepper after brown
GRAVY- flour & water in juice of pan
take pan off stove when adding flour
add salt& pepper
