Banana Chocolate Chip Muffins

Ingredients
- 1 cup flour
- 1/2 cup whole wheat flour
- 1/4 cup ground flaxseed or wheat germ
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 ripe bananas
- 2 eggs, beaten
- 1/2 cup packed brown sugar
- 1/3 cup canola oil
- 1/3 cup milk
- 1 teaspoon vanilla
- 1/2 cup mini chocolate chips

Step 1
1. Preheat oven to 350 degrees F.
2. Lightly oil or coat 24 mini muffin cups with nonstick cooking spray and set aside.
3. Whisk together the flour, wheat flour, flaxseed baking powder and salt in a large bowl.
4. Combine the bananas, eggs, sugar, oil, milk and vanilla in a separate bowl and stir until well blended.
5. Pour the liquid ingredients over the dry ingredients and stir until moistened.
6. Stir in the chocolate chips.
7. Spoon the batter into the prepared muffin tins.
8. Bake 15 minutes.
9. Transfer the pan to a wire rack and cool for 5 minutes.
10. Remove the muffins and cool and additional 5 minutes before serving.
