Cranberry Crumb Cake

- 1 pkg yellow cake mix
- 1 c buttermillk
- 3 eggs
- 1/3 c + 1/2 c butter, at room temp
- 3 t grated orange zest
- 1 c whole berry cranberry sauce
- 1 1/2 c all purpose flour
- 3/4 c pakced light brown sugar
- 1 t ground cinnamon
- confectioners sugar, optional

Step 1
Preheat oven to 350. coat 9" springform pan with cooking spray. On low speed, beat cake mix, buttermilk, eggs, 1/3 c butter and 1/3 c water until well blended. On med high beat 2 min. Stir in 2 t of the orange zest. Spread in the pan and bake 45 min.
Meanwhile in a small bowl, combine cranberry sauce with remaining 1 t orange zest. Melt remaining 1/2 c butter; cool.
In separate bowl, combine flour, brown sugar and cinnamon; with fork stir in butter until combined. Press mixture into crumbs.
Spread cranberry sauce over cake. Sprinkle with crumbs. Bake 25-30 min or until toothpick inserted into center comes out clean and top is lightly browned. Cool 20 min. Remove side of pan. Cool on rack. If desired, sprinkle with confectioners sugar.
