Ingredients
- 1 pound(s) plum tomatoes, halved
- 2 jalapeños, halved and seeded
- 1 clove(s) (small) garlic
- 1/2 medium white onion, cut into 1-inch pieces
- 2 tablespoon(s) olive oil
- Kosher salt
- Pepper
- 1/2 cup(s) fresh cilantro
- 2 tablespoon(s) fresh lime juice

Preparation
Step 1
Heat oven to 425 degrees F. On a large rimmed baking sheet, toss the tomatoes, jalapeños, garlic, and onion with the oil, 3/4 teaspoon salt, and 1/4 teaspoon pepper. Roast until the vegetables are tender and beginning to brown, 10 to 15 minutes.
Transfer the vegetables to a food processor, add the cilantro, and purée until finely chopped. Add the lime juice and pulse to combine.
